Pizza on the lighter side...

After being in Italy for almost 3 weeks... I ALWAYS wanted pizza!!! But, after gaining 8 lbs on the trip, I needed a healthier option to fill my "pizza void".  It was... back to reality! 

I found this low card, extremely healthy alternative to our Italian Pizza ! Eggplant pizza! 

Now, before you knock it... TRY IT! It's actually delicious , and even my husband approves! 

 

Needed:

medium to large eggplant (enough food for two)

mozzarella cheese

marinara sauce

dried basil

olive oil

toppings of your choice ( I like mushrooms and spinach) 

 

To bake:

Preheat oven to 350 degrees 

Slice eggplant into circles, about an inch thick each

Top with olive oil and basil ( garlic if you'd like)

Bake for 15-20 minutes

Take out and put sauce, cheese and toppings on 

Place back in oven and bake for 10 more minutes or until toppings are cooked and cheese is melted
